From my understanding, the only manner in which these schools are really useful is for making connections in the industry. You will learn the basics, but textbook knowledge doesnt mean all that much in an active kitchen. If you have decent knife skills, odds are you can get a job as a line chef just about anywhere and work your way up. And its not like you would be landing swanky high paying cooking jobs (lolnosuchthing), youd be starting at the bottom just like the people off the street.

dont go to a for profit school. check out the community colleges, in albany they have a great culinary program at linn benton for a quarter of that price.

even then youll start second from the bottom instead of the bottom of the ranks.

i say if youre iffy on working in the industry, fiund a job as a dishwasher and take a few spanish/culinary classes at the city college near you. if you enjoy it, then work your way up and take professional development classes from the big schools every once in a while.

i suggest loooking into linn benton, lane community, and oregon coast culinary institute. theyre not in the most happening parts of the state, but if you wanted to visit portland it'd be easy to drive.

like i said before, if you really are iffy on a career, find a entry level job and see if you like the unique stress filled culture that so many of us are driven to for no good reason. it'll be quite a few years before you make enough to live comfortably. ive been working in casinos and resorts/hotels for 8 years, just recently got my acf certified sous chef certification and currently work at an indian casino making 17 an hour. it's not the best wages ever, but i'm happy

Most trade schools have been taken over by for profit companies like the the le cordon bleu in california. they basically try to get you to take out loans and and financial aid and sell you a piece of paper that is essentially worthless while teaching you nothing. Some restaurants will even look at the certificate and laugh at it and not hire them at all because of the quality of their reputation has gone down so far. There's very little respectable culinary schools left and they're harder to get into than a walk in. And even if you graduate from a decent tier school, you won't be able to pay back your debts that easily since you'll still most likely get entry level jobs when you graduate. They're just huge wastes of money when you can make just as much connections, skills, and experience as well as money by just learning how to cook directly from the source. Sure culinary school will allow you to skip dishwasher to line cook interviews, but that doesn't really matter when your only competition for that is a guy named Miguel or Paco. Even better is going to your favorite restaurant and asking them if they need any free help and that you want an intern or an apprenticeship and just want to learn how to cook. Most would jump at the chance of free help or at least would recommend you to a good friend that needs help. It's all about the connections really.

if you have some money saved, check out san francisco city college. the program is something like 5-7k but you get to live in the fucking city. most of your money will be going to cost of living. you can get a spot in glen park, which is kind of more quiet than the rest of the city and close to the campus (but also close to bart to get to the more happening parts of town and any jobs you have) for 800-100 a month.

OP, I went to George Brown in Toronto Canada for Culinary Management, and I only spent around 10 Grand at MOST in total for EVERYTHING. Knives, courses, books, Transit etc. And there, I learned from some of the BEST chefs around the globe. dont get lured into those fancy ass $40,000 "Chef" schools across the states, now-a-days every high-end restaurant/hotel looks for KITCHEN EXPERIENCE. We could debate the merits of attending culinary school again and again. In my opinion and experience, culinary school (a decent one, such as Johnson & Wales or CIA) is sometimes a good idea. I've met many people who worked the line for a decade in legitimate restaurants with chefs who told them to go to culinary school if they wanted to really advance their career and move to the next level.

I've also met many people who've worked their way up from dishwasher positions and have learned everything from working in professional kitchens...

In any case, you can certainly learn to cook by yourself at home - if your only goal is to be able to cook at home by yourself (and perhaps impress some girl).

If you actually think that a self-taught home cook can in any way compare to someone who's attended a culinary school, and more importantly, spent at least 4-5 years in a scratch kitchen full time, you are completely deluded.

Sure, only invest in culinary school if you know you are going to strive to make a good living/career in the food industry. But anyone who says that watching youtube and cooking 3 times a week can in any way compare to having a formal culinary education and then cooking multiple dishes 10+ times per night, 4-5 nights per week, is simply ignorant.

My overall advice would be to find a line cook position at a real restaurant (a place that actually states that they cook some percentage from scratch; i.e. no chain restaurants). Figure out if you enjoy working in a kitchen. It's hard work and the pay never really makes it worth it. You have to enjoy the work. If you work the line for a couple of years, and work multiple positions, you will at least learn a handful of skills, and be confident cooking at home. If you actually enjoy it, ask your fucking chef for advice on advancing your career.

Sounds like you need a hospitality degree from a major university instead.

If you are dying to blow someone else's money, do something high demand.

Would going to a culinary school for both culinary management and culinary arts be worth it for (roughly) $34k?
