What is the best tool to use to separate the yolk from the egg white in large volume?

We're talking I got to do this with about 6 dozen eggs every morning and my hand is fast. I am tired of it being chilled to the bone after shifting through 2 gallons of baby chicken placenta.

Doesn't have to be perfect and if a few yolk break it is not the end of the world. If it also helped strain the way ward pieces of shell that would be neat.

just crack egg normaly but keep them well cracked,you know what I mean?the yolk is unbroke.crack ton of it and gently take the yolk with your hand while posing with hand like spock from star trek,take the yolk out gently to separating them(yolk and white egg).really work for me since I cracked 10-12 dozen a day when working in cake industry.

use your hands
the whites will slide through your fingers & leave the yolk in your palm
seriously, its the easiest & most efficient way
I used to cook for like 300 people
that worked out to me cracking anywhere from 450 to 500 eggs & I found using my hands to be the best method
also crack them a few at a time in one bowl & then add them to the big bowl to make sure you don't get any unwanted shells or whites

This. Use an intermediate bowl too so that if one of your yolks is thin or breaks you haven't contaminated all your egg whites

3 tips: be gentle but firm. practice, everything becomes easier through repetition. crack on a flat service, it sounds odd but it reduces the chance of shells going into your egg
