I like putting a little bit of ketchup on a dog with a spicy mustard because it does the whole sweet/spicy thing. If all I have is plain yellow mustard, then I don't bother - the mustard is so weak the ketchup will just overpower it.

One thing I use to get into when I used to work at 7-11 was mayo, tomatoes, and onions. Actually pretty good.

My vote goes to mustard, from the yellow to brown venegar-based spectrum. Other valid options include sweet relish, saurkraut, or finely chopped onion.

Kimchi is also good. If you think about it, it's not too far removed from kraut.
