I am a believer, I thought it was some bullshit voodoo trick but after having some today I can surely say it is the only way I would like to have my steaks from now on.

5 weeks and at a temp that sits just above 0 Celsius. You'll also need a space where there is good ventilation and that where it is rather dry. The mold that settles outside is actually beneficial for the ageing process though I don't much about reading mold.

How can you claim that something is superiour to something else when you are serving it at less than it's prime. The wine needs to be aged and served chilled to optimize the flavour. You wouldn't drink warm single malt whiskey the year after it was bottled and exclaim that it was amazing.
