So which American chef or restaurant is regarded as having the best sushi?

>> No.4348983

The Iron Chef.

there's no point to the question. There is a paradox in American sushi, as what makes real sushi "great" will not be appreciated by an American taste (me included) while what makes American sushi "great" is considered low-class and inauthentic.

Just eat what you like.

So, what makes sushi "great" and what makes American "sushi" great?

>> No.4349067

>what makes sushi "great"
quality of fish and quality of rice and preparation
>what makes American "sushi" great
amount of whatever isn't fish or rice that is put into sushi

Sounds like you can make "great" sushi in America, then.

The question is still open. Who's the American chef that's at the top of their game?

Gordon Ramsay.

Sure you "can" (or could if you spent enough money) but nobody does it or wants it. American and Japanese eating culture is drastically different.

So you're saying sushi in japan is about getting the highest quality ingredients and sushi in America is about actually making good food with what you have and being creative in your choice of flavor combinations?

The whole reason Jiro Ono has the best sushi in Japan is because venders will only sell their best rice and fish to him. The skill is artificial

Having eaten sushi in both places I can tell you that you are wrong.
