One of my favorite seafood restaurants does sushi as well - I usually get a variant on your everyday spicy tuna that has avocado and is tempura fried.

I live in a small town in Louisiana and we have a Japanese restaurant with a sushi bar and two dedicated sushi chefs (I assume one is the head and the other is the sous chef). Anyways, they get good business, and alot of people order these americanized rolls covered in sauce. I tried one once and literally all I could taste was the sauce.

The thing is, they get excellent quality fish. Aside from that one time, I always get simple sushi and sashimi. I guess my favorites are the red snapper and eel sashimi. I feel like the sushi chef gets a little twinkle in his eye when I order these traditional pieces. Usually I get a free cut of sashimi or a roll out of the deal when I make a meal out of the sushi.

I absolutely despise sushi. Even if it was Batman's favorite food, I would still think it sucked. That's a pretty big statement coming from me, for what it's worth.

It tastes pretty good, and the variety is nearly unmatched. No doubt about that.

You have two kinds of people: 1.) People who eat sushi as a status symbol. 2.) People who are Japanese.

I don't know a single non-Japanese person that eats sushi because they like it. I mean, sure, they probably /do/ like it, but they like being someone who eats sushi even more. They're the kids who would eat disgusting things as a dare, but now they're all grown up. Ask anyone who eats sushi what they're favorite tacos are, and they're going to say lengua 98% of the time.

I wouldn't want to waste my appetite on it, so I'll never eat it again. I'd much rather have a Mission-style burrito. After all, they're both just ways to deliver lots of rice to your stomach (nb4 rice in a burrito).

I'm not sure what to use in place of nori.

I'm thinking corn, but that ends up being a thin tortilla. If made in a rice paper way, then it ends up being sticky in the mouth. Deep-fried, like a spring roll? Maybe too sharp, too crunchy. Not true to sushi.

Kale nori. I think it's possible. Other than that ... something that can be used like nori but that isn't like nori. Distinctly American. Kale nori is perhaps best, to really convey the intent, avoid stickiness, and too much starchiness.

Mac and cheese spread on kale nori, with a bread crumb center. Plated, concentric circles. Pick it up? Bread crumb core releases onto the plate, leaving a little mound behind. Allowing a real mac and cheese experience in your mouth.

Pulled pork, california rice, brown rice. Ribs, crunchy sweet potatoes, sesame seed rice. This could be a lot of fun. I'm sure it's been done, just never as a specialty.

I like to get crunchy tempura rolls with cream cheese in them.
The place near me normally has avocado in the roll and the outside is rolled in tempura flakes and tobiko.

The contrast between the crunchy shrimp and the smooth creaminess of the avocado and cream cheese is delicious. I came across this combination by accident, I used to work at a sushi place and someone ordered it for takeout or something and never picked it up, so I got to eat it.

And people should stop being so hipster about sushi. I guarantee the Japanese don't care. I also guarantee that they have raped our dear western foods ten times as hard as we have their food and none of us give even half a shit.

I lived in Japan for a year, and the fish part of their sushi/sashimi was always better than what you get in America. More flavor, less tough, just seemed fresher - even if you went into one of those kaiten sushi places where a plate of sushi is only about a buck, it still tasted better than anything you'll find in even a "nice" American sushi restaurant.

However, American sushi rolls are by far more interesting and tasty than the kinds of rolls you'll find in Japan. I never, in fact, had a good roll while I lived in Japan. True, their rolls were often more portable, and you could take one on a hike with you like a sandwich or something, but breaking down the components, they were often dry, bland, and uncreative. This may have been because I just didn't go to the right sushi restaurants over there, but in any case, American-style shit like the dragon roll, or the rainbow roll are not common over in Japanland.

That said, real Japanese sushi is creative in other ways, like substituting the fish with vegetables, or even pork. That kind of thing is pretty good too.

I'll usually go for a Caterpillar, Hawaiian, or a Tampa roll (fried grouper, scallions and mayo,) when I'm going out for sushi.

Next time I make sushi at home, I'm going to make a modified Tampa roll, with blackened grouper and a creole remoulade in place of the mayo.

I'm pretty new to sushi.
I think the first time I ever had it was maybe only something like 2 years ago.

Generally, whenever I go to a sushi place (there's fucking 4 just in my town, and I'm only about 30 minutes away from Vancouver so there's a billion more out there) my standard order is a Teriyaki Chicken Roll.

I know that its not even really sushi (cooked chicken, cucumber, and teriyaki sauce) but it was the first thing I ever got at a sushi restaurant because I wasn't quite "ready" to jump headfirst into raw fish and seafood.

Unfortunately it has stuck with me, because I LOVED it. Absolutely delicious.
Now, i really can't go to a sushi place WITHOUT ordering a Teriyaki Chicken Roll, because its just so good.

I've had Teriyaki Beef Rolls before (more of the same blasphemy, though) and recently started eating California Rolls too.

I know that these are seriously bowdlerized versions of sushi though.
What kinds of new rolls would /ck/ recommend? I'd really love to try as many different dishes and flavours as possible, so I can build up a nice little list of sushi I know I like.

So, for an American who love sushi of all sorts - mayo or no, straight nigiri or a maki that's as off-the-wall as you can get, tuna or tempura crab, tell me - what exactly qualifies as the "traditional sushi" pieces?

I've gotten so entrenched in enjoying sushi as it's served here, I have no idea.

As far as I know, the nigiri sushi thats just a slice of fish on a round of rice is typically the most sought after, and they eat things like negitoro rolls, which is minced tuna scraps mixed with onions, when the bill is getting out of hand. Which is weird, because I'd take the negitoro roll over the nigiri any day

The nigiri of course all depends on the freshness of the fish. I've had some damn good nigiri and some damn awful nigiri, which is why I tend to be hesitant about ordering it anywhere that's not within 20 miles of a major coastline.

U don't know much about fish. It's better after a few days. The protein as to break down a little bit. They age tuna in Japan, for instance. Read a book, watch a documentary...don't assume shit.
