As a UKfag I have been intrigued as to how many Amerifats and Canadians rave about Quebec Poutine.

Is it really so fucking OMG amazing? I mean it's just chips and gravy with cheese curds.

Of course they are proper chips, like UK Chinese chippy chips, Belgian style chips, not "french fries" which are an 'murrikan invention and just overpriced fried jullienne potatoes.

Anyway, as no northern Chinese chippy in the UK sells Poutine (thought they certainly sell chips in gravy or curry sauce), I had to go about re-creating this dish myself.

Ok, I could have had the nice Chinese lady make me proper northern UK chippy gravy, but that stuff is really thick and meaty, and from what I hear Poutine has a light gravy.

The nearest shite tier gravy is Bisto - it is really mild and also overpriced. It was also in my cupboard, I prefer Aldi Quixo myself.

Now the cheese - the Lumberjacks insist on fresh curd. Ok, I could make a batch by adding lemon juice to milk and boiling it up (which I have certainly done to use up cheap milk), but for convenience I could use Cottage Cheese or Feta (or rather cheap "Salad Cheese") - It's basically curds still swimming in a bit of whey.

As a Canadian, and an Acadian, I must warn you that a truly good poutine is in the gravy. Once you're dealing with fresh cut fries (none of that frozen shit will make a decent poutine), it doesn't matter how perfect the fries are since they'll only get limp with the gravy. Same with the cheese (except melting, not soggy), although if you're going for authenticity, you really want as fresh of a cheese curd as you can get. Also, goat cheese curds are how they do it in Gaspé (maybe elsewhere too, but I wouldn't know), and the extra "squeak" you get with goat cheese means better texture once the gravy is doing it's job. Anyway, the only thing that really varies among good poutines is the gravy, so make sure you take the time to make a good one. And a touch of acidic is better in my opinion, so a tiny amount of tomato juice while you're cooking it is advised, if you're willing to gamble on it.

My boyfriend is nuts about this shit, we go to this tiny Canadian ice cream place way out of the way just to get it. I don't like cheese, let alone curds, so I don't really see the appeal, but it's apparently very tasty.
I think it was just thick french fries, brown gravy (like the packets of shitty brown gravy) and mozzarella curds. It was very hot but the curds weren't goopy melty all over the place.

New Yorker who used to live in Montreal reporting in. In Montreal poutine was always seen as a lowbrow overkill dish French-Canadians would indulge in during the winter. It's served at hot dog joints. As another poster mentioned, the gravy and cheese curds are very particular, resulting in the flavor of regular poutine. Some of the variations include poutine hiot dog (cut up steamed hot dog added) and poutine Michigan (substitute canned meat tomato pasta sauce for gravy).

I don't consider poutine a dish worth seeking out. I think it's caught people's interest because it's so over the top and Montreal has been getting some press lately for its food scene.

If you want a taste of what's good in Montreal try their bagels or their smoked meat (kind of like pastrami). If you want a taste of lowbrow Montreal deliciousness Habitant pea soup, a shish taouk sandwich or a slice of tourtiere (meat pie) would be better than poutine.

But the stuff has become popular, regardless. There's even a poutine joint in NYC now, though it's hasn't been quite as warmly welcomed as the Montreal bagel and smoked meat joints.

Why do you think that most Canadian poutine is served in roadside vans? Sure there are a few...I live in Toronto and can only think of 3 food trucks that do this. 2 are in front of the U of T library and the other is in front of Air Canada Center. They are horrible. Most people not exiting a sporting event or grabbing cheep food between classes eat poutine made with fresh cut fries, real gravy, and fresh cheddar curds. Other toppings are added at "fancy" places, like pulled pork, bacon, roast beef, etc.

I went to some of the best poutine places in montreal and the thing that varies most is the fries.
cheese curds all taste the same
some places like Patati Patata have nice thin crispy fries and chez claudette in montral has sweet roasted potatoes
