Knob Creek is a pretty decent mid-range bourbon. I'd definitely suggest getting Evan Williams single barrel, Elmer T. Lee or Elijah Craig 12 instead though, they're all nicer. Especially Elmer T Lee.

Also, if you're OK with cask-strength whiskey, Booker's is excellent stuff.

Makers is good but it falls just a little short of what I'm looking for in a sipping bourbon. I might have a double neat, but where Maker's really shines is in classic cocktails like the old fashioned or manhattan. I'm a fan of the 'perfect manhattan', with half dry and half sweet vermouth. Old fashioned would involve the least reagents, angostura bitters are really a must-have.

Ardbeg 10 is probably my favourite Islay. Quarter Cask is very young and raw, it's OK but it gets a bit much after a while. Uigeadail is wonderful, but considering how much cheaper the 10 year old is, it's probably better value. I used to love Talisker 10 too, but it's not so good anymore. Yes I like Lagavulin a lot, but somehow it's a bit too well-behaved, perhaps because the standard bottling is 16 years old. I like Ardbeg because it's got loads of peat and it's quite briny but it's not so overwhelmingly raw and smoky like Quarter Cask.

And yes in the grand scheme of things none of them are overpriced compared to a Port Ellen or something! I went through a bit of an Islay phase so now I'm trying a few more highland and speyside malts

Port Ellen prices are just ridiculous. That blew my mind when I was first getting into whiskey.

Also, I should have suggested Caol Ila and Bruichladdich for Islays. Neither is as strongly peaty as Ardbeg or Laphroaig, but they're both capable of producing some really good whisky.

As for Speysides, Aberlour and Balvenie are reliably good. I also really like the Glenmorangie extra-matured range, particularly Astar, Nectar D'or and Sonnalta PX. Especially Sonnalta. Ben Nevis makes some good stuff as well.

It's the extra age on the Elijah Craig 12 that mellows it out. Fresh oak like they use in bourbon casks works quicker than previously used barrels like they do for Scotch. Personally I think bourbon begins to lose vibrancy around 15 years,

Even then, I think a cask-strength bourbon can shine with even younger barrels, while bourbon watered down to 90 proof might be best around 10-15 years, a cask strength bourbon around 130 proof might really shine at 6-8 years like they do with Booker's. I get such an intense barrel char note from Booker's (not to say it isn't glorious) that I doubt extra time would do it many favors.

Some bourbon is awesome aged longer than 15 years but it's not common. Wheated bourbons tend to take age better though, in my opinion - Pappy 23 and Jefferson's Presidential Select being examples. Some old Willett bourbons are amazing as well.

You're in for some good times then, because when it comes to stout Guinness is pretty low-tier. Look into good craft stouts/porters, they can be vastly better. Imperial stouts and milk stouts especially imo.

Old Rasputin is a decent starting point for Imperial stouts- not exemplary but solid and not too hard to find.

Beer-layman here and I just have a simple question. I've been reading that drinking a beer or two a day has health benefits, but only if it's an unfiltered beer of a certain kind. Here's a quote I found:

So how do I tell if a beer is a "good beer" if I'm standing in the aisle surrounded by 1000 brands? Do I only buy hops and the darker types or are there some dark beers that are also "macro beers" that don't have the same benefits as other kinds?

I'd disagree on that one. Pappy's is definitely an absolutely god-tier bourbon, and probably ties for my favorite with George T. Stagg (a favorite for different reasons) but JPR is a fucking fantastic bourbon as well. It's geared differently though, more elegant and refined but with less bold flavors. It's not as good as Pappy but it's better than most, and unique enough that it's well worth the money in my opinion.

Ah OK I misunderstood you. I guess I went into trying Jefferson's with different expectations; I'd already read a few reviews of it and knew it would be quite different than Pappy's. Honestly I'm kind of glad; anything that tried to be Pappy's would inevitably just be a pale imitation. It's like Stagg; other things could try to replicate it but it would never be the same.

I've got to say that I've never really looked into the health benefits of beer. What I would guess is that, like most things, the more processed the beer is the less health benefit it would have, so probably craft beers would be a little bit better. Honestly I'd probably just suggest that you drink what you like rather than worrying about this.

Oh..fuck yes. I love pastis. Actually, I just emptied my bottle of Pernod the night before last and haven't gotten to the store to replace it yet. But I may have to do that now, because you've made me want some. :) So nice, and it settles my stomach after a meal as well. One of the best times I ever had was drinking pastis in the morning with some mates during a summer thunderstorm. It was like something out of a movie.
