i used to make this for breakfast everyday:

bologna or salami sliced (i started with sausage pressed out really thin but too much work).

frying pan, set on really low heat; oil and vinegar (paul newman's stuff is good), garlic powder, parmesan cheese, and the meat.

cover it so the low heat will cook it.

wheat bread, mayo, lettuce, pickles, more oil and vinegar.

once meat is cooked, cover it with slices of sharp cheddar cheese and more parnesan and garlic powder. cook until melted.

assemble the best sandwich i ever made.

what I pack for work most of the time:
two slices of toast
four to six slices of salami
iceberg lettuce
small amounts of hot sauce and spices.

I also love bread rolls with chicken, bacon, lettuce, tomato and sauce. When I feel adventurous, I add tortilla chips for crunch factor and spicyness.

Really depends on the meat. For the most part i'd just rub it with oil, salt and pepper and roast it. It is plain, but as you said, it's neutral so you can flavour it with other sauces and so forth.

The key is good ingredients. Don't get squarre loaf bread, get sour dough or baguette or something. Fresh veggies, pickled veg, mustard other than ballpark, etc.

My secret is flavoured mayos/aiolis. I usually make them from scratch, but it's just as easy to mix stuff into pre-made mayo. Try mixing two minced coves of garlic and some garlic powder into mayo, let it sit in your fridge over night and use that.

I don't eat deli meat out of principle. Until I own a smoker and a meat slicer, I will avoid it. It's too expensive for what you get. The best price I can find is "Oven Roasted Turkey Breast" for $4.48/lb. No thanks.

Luckily there are some alternatives. Chicken salad and egg salad, for instance. Whole chickens are $0.88/lb right now.

But the greatest sandwich is the Po' Boy. It's the original fried chicken sandwich.

Fresh catfish is currently on sale for $1.99/lb. That's more like it. I don't have prices for shrimp, oysters, and crawfish but they're probably about that amount right now.

Fry up a combination of those ingredients and slather on some mayonnaise onto some french bread and add lettuce, tomatoes, and pickles. Woooo-eeeee. I garon'tee.

Some melbfags from fitzroy will know what I'm talking about, there's this bakery on Smith street that used to make fob rolls but got really popular 3 years ago for actually making westernized bread rolls. They taste so much better.
The boss (who's an old friend of my mum) went to go learn some baking tricks at a school, which led him to making the best baguette.
I had it yesterday but didn't take a photo, it was thin and crisp to the bite. The inside was fluffy and the outside was shiny and golden brown.
This baguette was not like the usual ones you would get at any generic fob roll stores.

Mine is simple:

Place roast turkey breast (chicken is also acceptable) on fresh ciabatta

cover with generous slices of top quality brie

bake until bread has slight crisp and brie begins to melt

while doing this you better be sautee-ing some shallots

Then spread raspberry compote (fresh raspberries, splash of oj and a pinch of sugar and cook) or somethign of the like on bread

insert grilled shallots

insert arugula

???

profit!

tl;dr - Baked turkey and brie sandwich with arugula, raspberry compote and grilled shallots

when i get a sandwich from a deli i always order:

fresh mozzarella, roasted red peppers, lettuce, tomato, black olives, onions, olive oil, vinegar, salt and pepper.

when i make a sandwich at home it's usually:

-avocado, tomato, feta, romaine lettuce (or baby spinach) and hummus (homemade hummus) with red pepper flakes and sea salt.

i wasn't raised vegetarian, and lived above an italian deli in brooklyn so my mother usually didn't make sandwiches we'd just go downstairs and get them and usually then it was an italian sandwich (you know pepperoni, mozzarella, etc. etc. etc.)

Toastie's in NYC does a sandwich called The Alice that I absolutely adore. It's slices of turkey breast, Brie, superthin slices of Granny Smith apples and Romaine lettuce over toasted multi-grain bread and honey mustard. I've tried replicating it at home but my knife skills suck so I can never get the apple slices thin enough.

I found myself making a sandwich over Christmas break. Family was in, so deli meats were abound. I know this isn't going to be /ck/ approved, but it was damn good.

Two pieces of white bread
Five slices of ham
Five slices of turkey breast
Slice of Provolone
Slice of Muenster
couple pieces of iceberg lettuce, good mix of green and white
French's Yellow mustard
And then I changed it up....I did a bit of Kraft Creamy Italian. First time having it on a sandwich.
Dash of a local all purpose seasoning.

And I gotta say, that was thee most amazing sandwich I've ever had, hot or cold. Perhaps a slight toast on the bread would've added to it, but I don't know.

this tastes great and is easy as hell to make.
take leftover pizza, preferably a supreme or something from a gourmet place.
cut a few slices up into real thin strips and chuck them on a plate.
microwave the everloving shit out of it until it's 500 degrees.
while microwaving, butter two bits of bread, preferably nice bread. or you can use a roll that is fine too.
put nuked pizza strips between bread or in the roll.

I just finished making a sammich before coming here. Lettuce, a bit of tomato, mozzarella, pickles, mustard. Salt and pepper on Sara lee bread. I like multi grain bread but I had none.
