OP here,
I'm really happy with how this turned out.
The fish was Oreo-Dory, first time I've tried it and it was amazing. Very similar in texture and taste to Orange Roughy, except even more flavorsome.
I pan fried in a mixture of butter, olive oil, and a little sunflower oil. I removed cooked fillets and added the juice and zest from 1 lemon, whisked to combine, then added some finely chopped parsley and spooned it over fish.
Best fish I've had in a long time.

I just had broccoli gratin. Eggs, cheese, broccoli, sauteed onions & a bread crumb topping.
I had to use up lots of leftover eggs & broccoli.
