I make some awesome carnitas in the oven I just get a bunch of porkchops put em in a pan bake em and season them and when they are done just chop em up ninja style with two knives and heat up some tortillas , serve with a side of salsa and quartered lemons

I love Tex-Mex tacos with ground beef, lettuce, cheese, sour cream, etc.

But these are something really fucking special.

Onion, cilantro and lime. Then just replace the meat with something extremely filthy and unsightly like feet, tails, tongues, etc. for cents per pound.

Best carnitas are actually on the sides of the roads in a semi-busy mexican town. Typically a very old lady will be sitting there, slow as fuck, but can serve 30 people with ease.

I love carnitas. But, I don't really make it at home, because I don't have the right giant pot and outdoor cooking situation to make it properly. Not that you can't make carnitas otherwise, but it's sooooooo much better when you make it right.
Anyway, kind of off subject, but still related, I'm making a huge pot of chili verde right now. Enough for dinner plus enough for the rest of the week, or to freeze. YUUUUUUMMMMMM
