I have no people, but my mom used to make the most deliciously bastardized version of chile rellanos. I'd call them white trash food, but they require the whipping of egg whites.

Canned whole chiles, stuffed with slices of jack cheese. Dredge in flour, and dip into egg whites flipped to stiff peaks with the yolks beaten separately then folded in. Pan fry and serve immediately over lettuce. Pretty damned good for a cheap and easy meal. I think my dad's mom gave her the recipe to begin with.

My spouse is from Tennessee, and loves little more than a huge plate of homemade biscuits and gravy.
