raw -> now tell me, why the fuck should anyone eat their eggs raw? I've eaten raw eggs and know that some (mostly asian) people do it, too. it's simply disgusting and stupid, it adds no taste (and before you judge me, I do know that I need fresh eggs, I live in a rural area so that's no problem) and the texture is horrible.
why? just why?
and don't even start with carbonara, as soon as the egg mix meets the hot pasta it can't be counted as raw anymore.

What is /ck/'s opinion of pasteurized egg yolk in carton form (vs. fresh separated eggs)?

I do a lot more with egg yolks (e.g. carbonara), and having them easily measurable and pasteurized is amazing. The only argument I can think of against them is the difficulty of finding them.

I live in the Netherlands and they have tested it here, and about 1 in 4000 eggs is contaminated.

That's...not as bad as I thought, to be honest.

I've spent my whole life thinking raw eggs were dangerous.. people have been saying this to me since I was young.

Although... 1 in 4000 is still a small chance, I wouldn't recommend it for young kids or elderly people, salmonelly could potentially still kill them.

Not sure how it is in America, maybe that's where the myth come, maybe they ARE dangerous there.

EVERY time I try to make it, I either don't heat it enough and it doesn't set or it curdles and is fucked. Not using any other thickener. Maybe its my shitty electric burner that just seems to pulse less when on lower settings?
