ITT: red beans and rice appreciation thread

It landed me my first job, provided me with nourishment when I was poor, and is my ultimate comfort food. I'm cooking some tomorrow, so I thought I'd upload some pictures I saved from Google Images.

I'm from New Zealand but am quite interested in cajun(?) cooking. I gave these a try the other day, and although I quite liked them I found them to be quite salty. Do you make pickled pork for it? if so, do you rinse the pork before you cook it?

Even though the video is fairly aspie, the recipe was one of the few i have found that just uses basic ingredients I could get here.

Also, cheapest red beans (which were fairly old I think!) I could find were about $4 us/lb which meant it isn't quite poverty food over here, hah!

No, it's Creole.

It can turn out that way if you consider the amount of sodium in hot sauce, pickled pork, etc. This is something you'll have to figure out yourself.

Yes, and no. But you don't necessarily need the pickled pork. Sometimes I just fry in bacon and use ham hocks to simmer.

I didn't watch the video, but the recipe looks good from a glance. There's a few things I'd change, but that's strangely close. Most recipes I look at suck.
