I'm making stuffed bell peppers for dinner tonight but I don't know what to stuff with

I want a meatless recipe and I was thinking of going with brown rice, lentils crushed into a paste, italian-seasoned tomatoes, parmesan, and maybe some other type of cheese too

Any advice or modifications you can think of for stuffed peps?

semi related- The kids and I every Halloween make stuffed peppers but we carve them like jack o lanterns.
Genreally we're partial to making taco seasoned meat, cheese, and spanish rice for them.

Naw, hasn't been the case yet, but given that we scale appropriately the opening aren't amazingly big. We use the small saw things that come in carving kits.

As far as I have ever heard, stuffed bell peppers have always been a vegetable + rice dish with some people sprinkling in ground beef. How is it meat-based? I don't need meat with every meal

Sounds good. Another one you could do is black beans instead of lentils, some chopped up olives, shredded carrot, onion, garlic. Maybe some cajun seasoning.
