I agree with you about the sweetness part though. Putting a sweet syrup on top of ice cream is just sweet on sweet, and is pig disgusting. Berries, olive oil, PB, etc are only acceptable on sweet cream ice cream in my opinion. If it was supposed to be paired with the ice cream, it would be IN the ice cream. But what do I know, I'm an ice cream/sorbet elitist.

Breyer's French Vanilla is bland vanilla just like all the other bland vanillas and Breyer's also has 'Homemade Vanilla' and 'Extra Creamy Vanilla' which I haven't had, but Breyer's Natural Vanilla with vanilla bean is really good. So clean tasting.

I usually make a simple apple pie filling in the microwave.
-1 baking capable apple peeled and sliced
-Pie spice (aka cinamon, nutmeg, all spice, ginger) to your taste
-Citrus fruit juice or desired rum
-1 or 1.5 table spoons of sugar (omit if rum is used)
> Get a microwavable bowl big enough to give you a little room on top of the sliced apple (cause these things are gonna inflate quite a bit unless you sliced them pretty thin)
> Sprinkle citrus juice on them, then dust with pie spice to taste, add sugar

As a teenager, I liked to put some egg or fruit liqueur over my plain vanilla ice-cream for a little extra kick. Something creamy like Baileys worked pretty nicely, too.

I'm not very much into alcohol but I found it to be quite pleasant.
