bake cheesecake in waterbath
no crack, not burnt
still browned on the side facing the oven door - this is happening with other things that go in too, whats up with that how can I fix it?
guess I find out tomorrow if waterbath leaked in

Sounds like your oven is unevenly heated. Just rotate the cheesecake halfway through the cooking and you should be fine.

And yeah, like other anons said, those blueberries freak me out. I got goosebumps just looking at them.

Ya, you have a drafty oven door. slight airflow will 'draft' the heat (like a convection oven). rotate the pan 180 degrees halfway through cooking, you should be fine.

Real convection ovens are the bomb, I can air fry in mine

You don't have to rotate the water bath, just gently (GENTLY) rotate the spingform pan or whatever you use that the cheesecake is in.

Might I suggest just putting the water bath on the bottom rack, and then putting your cheescake on the rack above it?

It doesn't necessarily have to be sitting in water.

THe proximity of the water shouldn't be that much of a deal.
Just stick the pan with the water on the bottom rack. If you absolutely cant do that, just rotate the pan you've got the cheesecake in. The water doesn't need to move with it.

Dude I just told you to NOT take out the whole pan. Just rotate the little pan that the cheesecake is in. Leave the water bath as it is.

Although to be fair, unless you're really rough/way too impatient, you probably could take out the whole roasting pan/cheesecake thing, rotate it, and be fine.
