Can anyone recommend some good pita bread and hummus recipes?

This also interests me. I did make hummus once before, and it was ok. IIRC my recipe was

I used to eat falafel and hummus everyday. I got really good at making it, and saved a ton of money on groceries. It costs practically nothing to buy the ingredients, and they last forever. I'd even buy huge 2 lb. bags of sesame seeds and make my own tahini.

Yogurt for breakfast, falafel sandwich for lunch, hummus and lentil soup for dinner.

But then I realized I was lying to myself about how much it sucks.

Pita Bread
1/2 cup & 1 tablespoon warm water
3/4 teaspoon active dry yeast
3/4 teaspoon white sugar
1/2 teaspoon salt
1 cup all purpose flour
1/2 cup whole wheat flour
1 1/2 teaspoons vegetable oil
Place yeast, sugar and water in a large bowl and let proof.
Add salt, flours and vegetable oil and knead. Form a ball and cover. Let rise 1 hour.
Punch down dough and separate into 8 balls. Roll out dough circles on a floured surface and cover. Let rise 30 minutes.
Preheat oven to 500 F. Place pitas on a wire rack. Bake 5 minutes until puffed and browned. Remove and place in sealed paper bag or cover with towel until soft.

Basil Hummus
1/4 cup pine nuts
2 cups basil leaves, packed
2 garlic cloves, minced
2 (15 ounce) cans garbanzo beans, drained
1/4 cup olive oil
1/4 cup tahini
1/3 cup lemon juice
1 1/2 teaspoons salt
several splashes hot sauce
1 teaspoon tomato paste
Combine all ingredients in a food processor until smooth. Add water if necessary.
Place in bowl and drizzle with olive oil and sprinkle with pine nuts.

3 tablespoons tahini
3 tablespoons lemon juice
1 teaspoon salt
1 clove garlic, minced
2 tablespoons olive oil
1/2 teaspoon paprika

Place the garbanzo beans, tahini, lemon juice, salt and garlic in a blender or food processor. Blend until smooth. Transfer mixture to a serving bowl.
Drizzle olive oil over the garbanzo bean mixture. Sprinkle with paprika and parsley.

Roasted Red Pepper Hummus
1 (15 ounce) can garbanzo beans, drained
1/2 cup roasted red peppers
3 tablespoons lemon juice
3 tablespoons tahini
1 garlic clove, minced
1/2 teaspoon cumin
1/2 teaspoon cayenne pepper
1/4 teaspoon salt
1 tablespoon parsley
olive oil
paprika
In a food processor, puree the garbanzo beans, red peppers, lemon juice, tahini, garlic, cumin, cayenne and salt. Process, using long pulses, until the mixture is smooth and slightly fluffy. Scrape the sides to incorporate everything.
Chill for at least 1 hour and return to room temperature before serving. Sprinkle with parsley and paprika and drizzle with olive oil.

Cut them in half and de-seed, rub with olive oil, stick them under the broiler for 10 minutes, get foil and wrap them tightly so they continue to cook, let rest for 5-10 minutes, and when they're cool peel the skins off.

Hummus from fresh chickpeas isn't hard. Food processors are basically a must though, the bigger the better. The following is what I do but it makes a bunch, you might want to make half if you don't have at least a 12 cup processor.

Boil 1lb dried chickpeas in salted water (plus a pinch of baking soda, it does something to the ph of the water to make the chickpeas really soft) in a crockpot on high for about 4 hours. While chickpeas are cooking roast a head or two of garlic in oven/toaster oven. Drain chickpeas when done, reserving liquid. Put chickpeas in food processor, add juice of about 3 limes or 2 lemons, some tahini (about a cup or so, just eyeball it), roasted garlic about 1/2 cup of the chickpea broth (can save and freeze the rest for soup broth). Process all ingredients, drizzling in olive oil while processing. That's pretty much it, you can add roasted red peppers + sour cream or whatever other ingredients you can find from looking at store brand hummus, recipes on the net, etc.

Don't just stop with humus and pita. Make a meze platter by adding things like tabouli salad, tzatziki sause, baba ganoush (can be scooped up with pita bread like the humus), feta cheese and kalamata olives. In Greece and the ME, this platter serves as a small meal.
