Hey /ck/ My friends are hosting a byog taco party (that's Bring Your Own Guts).

I'd like to hear some interesting taco gut ideas. I'll probably end up bringing al pastor but I've also made asian tacos with:

Fried chickpeas in a sweet and sour sauce
Rice
Pureed chipotle in adobo
queso fresco
avocado

Take the (delicious) literalist approach. Fried tripe, or maybe tongue. Cilantro, onion, lime juice, a little cumin, and some tomatillos.

Try fish tacos. Fried preferably, with some julienned cabbage and crema. That pureed chipotle sauce you mentioned would be a nice in it as well I would think.

Add some Japanese curry (w/ the standard potato, onions carrots) to the rice with small chunks of sauted chicken thighs. Enjoy heresy.

Most of my friends know how to cook pretty well. The only problem is that they often make overcomplicated recipes that are way beyond their capacity to understand or do well.

I've had a couple different arguments with my friend's girlfriend that she trying to include too many things into one dish/entree. I brought over some shrimp once. The plan was just to cook it in some butter with light seasoning and some lime juice. When it comes to seafood I think simplicity is the way to go. Anyway, this girl insists we make kebabs and adds a bunch of random vegetables we had laying around. She grills them up; the shrimp is overcooked and the veggies were VERY undercooked because they were cut into giant chunks. Then she tells me that I need to be more creative and risky in my cooking.
