if you're gonna go the steak route, here's what you do.

good rib-eye steak. use a cast-iron skillet. throw the skillet in a 500 degree oven for like 20 mins or so, just to get it really really hot.

take your steak. throw some kosher salt on that mothafucka. some pepper. then a little bit of peanut oil (try not to use others, they burn). move the steak around in that oil (both sides for all these ingredients).. it'll help develop a nice brown crust.

pull skillet out of oven and onto burner on medium-high/high.

put steak on it for AT LEAST 30 seconds. don't touch it even before that. after that, flip it. DON'T TOUCH FOR ANOTHER 30 SECONDS I SWEAR TO GOD I WILL MAKE SURE HE SHOVES IT IN DRY

put that shit in the oven (on 500 still, i think) for 2-4 minutes (probably like 3 for medium rare which is best). test for done-ness with dat squeeze test.

Oh, sorry, I forgot that the shrimp scampi had cream. You could try this one as well, just cut the recipe in half since you're cooking for two and marinade ahead of time. Then just bring it over to where you're going to cook in a tupperware or some shit and put it in a skillet instead of grilling. It's very, very easy once you get everything marinading.

Make him a nice steak, but not having cheese for an older white guy when you're trying to impress him is really not starting out on the right foot, white people love cheese.

Salt your steak before hand with large sea salt (not table salt) and let it sit for 40 minutes and then clean the salt off and pat it down to dry it then cook it.

Obviously don't over or under cook it, but it is a pretty easy meal to make. Also make sure you clean off the salt well.
