Yo /ck/, yesterday saw Jiro dreams of sushi documentary, and saw this delicous spongy cake-like omelette being prepared (it's supposed that apprentice's need 10 years of experience before being allowed to prepare this).

I've been searching for a recipe without success, just finding omelette/tamago rolls recipe. Anyone care to share a good recipe?

Well see your problem is you haven't been a sushi apprentice for 10 years. No recipe exists because the process for making this dish spontaneously appears in your mind after apprenticing for that length of time.

Thats obviously poundcake, and the recipe couldn't be simpler.

1lb of flour
1lb of butter
1lb of eggs
1lb of sugar
1lb of salt
1lb of baking soda
1lb of baking powder
1lb of vanilla extract

Put it in a bowl, mix, put it in a greased pan, then bake at 350 degrees for 40 minutes. Just like grandma used to make.

from what i can tell in the documentary, their tamago looks to mainly be yamaimo and eggs. perhaps the yamaimo is what gives it the spongy texture.

Well yeah, you don't use volume measurements in baking. A cup of flour can weigh anything from 100-300g depending on how you pack it, for example. That would be the difference between baking a crepe and a brick.

If you use more its not a pound cake though, you're fucking up the delicate ratios.

It is very easy to make that. Even if you lack the proper Japanese omelet skillet, you can make it with anything you have laying around. The secret is to use real soy sauce from japan (they don't use sodium benzoate so it tastes soooo much better) mixed with a little bit of sugar. Scramble an egg with that sugar soy sauce mixture and the only thing you'll have to do is cook it.
