They don't sell well because they don't appeal to the lowest common denominator.
This is why corporate fast food, while rarely terrible, is also rarely good; they need to make the food appeal to as wide an audience as possible and offense the tastes/preferences of as few people as possible.
For example, making a curry burger might sound delicious, but middle America wouldn't generally like it.
McDonald's works around this problem of appealing to the lowest common denominator by offering regional items such as McDonald's Hawaii and offering ramen and McDonald's of New England offering lobster rolls; research has indicated that the lowest common denominators in those markets like ramen (Hawaii) and lobster rolls (New England).

I was getting a Chipotle Chicken Club at least once or twice a week. That thing was glorious.
Now I can pay a few bucks extra to get something close but in actuality nothing like it since it was a limited item.

does anyone remember the chicken caesar burritos that taco bell used to have? they were so GOOD!!! they had crisp romaine lettuce and caesar sauce in them, they were much better than that cantina crap they are selling these days and were only $3.00.
