I think runny yolks are good if you have something to mix them into, otherwise they are kinda gross.

Runny yolks mixed with things like hollendaise, gravy and sauces add a lot to the meal: makes the dish more succulent. I would much rather eat runny eggs than browned or overcooked ones.

I used to not be able to eat hard boiled eggs. The fully cooked yolk texture put me off. Turns out I was being given overcooked hard boiled eggs. recipe for french-style scrambled eggs:

you'll need:

butter
3 eggs (obviously)
a small pot with a heavy bottom
some creme fraiche (if you have none, thick greek yogurt will suffice)

>you can make some at home with thick greek yogurt and sour cream. Just mix 1 part yogurt with about 3-4 parts sour cream and leave at room temp with a paper cover for one day

1. Melt butter on med-high heat
2. crack all three eggs straight into pot and stir quickly with a rubber spatula on med-high heat
3. allow the egg to coagulate a bit and take off the heat and stir until it stops coagulating. take it back on the heat and continue stirring.
4. do this 2-3 more times.
5. once egg is a fluffy and mostly coagulated, take off the heat and add a spoonful of creme fraiche and stir until completely mixed in. the creme fraiche should cool the eggs to keep it from overcooking.
6. serve on toast with cracked pepper and salt.

Honestly, I like my eggs plain as hell. Two or three eggs, salt, and pepper, scrambled and cooked until they're not runny anymore.

I think it's because my Mother used to cook her eggs into oblivion for years, until they were brown and rubbery, and then douse them in ketchup. I literally spent around 7 years wondering how the fuck they made eggs so good at restaurants because I had been taught one terrible way to make them.

Here's my favourite way:
>dice salami (I usually use the one in pic, where I come from we call it somthing like "Hunter's salami")

>put the above on a dry pan, let the fat simmer from the salami
>add eggs
>add salt and pepper to taste
>serve with tomatoes
Not sure how much healthy it is, but it is pretty damn good. And before someone starts blabbing about milk, I left it out on purpose. Cheese is optional.
