It implies well marinated and tender flank steak that is cooked over an open flame and cut into small pieces so that it can be rolled into a delicious taco. its like fajitas that are char grilled and served already rolled in a tortilla, instead of on a gridle. have you not had tacos al carbon?

It may be a regional thing for Texas, I thought they were around in other places though. It's nothing special, its pretty much a fajita taco but the meat comes out already in the tortilla, whereas if you order fajitas the meat and stuff will be separate on a griddle for you you to assemble yourself. Anyways, if you've never had fajitas or tacos al carbon I would highly recommend them.

protip: if you have to pay for the tapa cause its not included with the drink, its not a real tapa, its a racion
