Flatten it out. Make a hole in the center so when the meat contracts it doesn't bulge. Put in the freezer as you cut all your toppings (max 30 minutes) then grill. Getting it cold helps the meat stay together when transferring the patties to the grill without breaking apart.

This is Ferran Adria's recipe:

Take a bunch of chuck, mix it with an egg (for one 3 or 4 person meal) or two (if you want to make a bunch in advance), and crumbled white bread that you've soaked in milk. Then add salt and pepper to the whole thing.

Then you can season it how you want and put whatever else you want on it. Having the eggs and bread just makes it way juicier.

Personally, I like putting sauteed onions, blue cheese, bacon on a Cajun-seasoned patty with the Ferran Adria thing.

I always cook my burgers on the grill covered for 2 min on each side, then 1 minute to melt the cheese. That'll get it to about Medium-Rare/Medium.
