Round Three (June 25 - July 1)

not sure if serious, but my fiance made that and she basically winged it more or less. As for the other question, we're both poor biology grad students who cook as a hobby (no professional training)

Off the top of my head from I remember it was

>garlic
>roasted shallots (used from earlier in the dish)
>dash or two of heavy cream

This is a gumbo I made. I make some variation of it every week or so. This week I put fried chicken and deer sausage in it. It is inexpensive to make and tastes amazing. Try it out for yourself!

I started with a broth of chicken carcass, onion, carrot, ginger, galangal, coriander stems and toasted cinnamon, star anise, and black peppercorn in a pressure cooker. Made a paste of toasted and reconstituted new mexico and arbol chilis, shallot, lemongrass, garlic, shrimp paste, ground coriander, cumin, and turmeric. Fried the paste in oil and deglazed with coconut milk, reduced and then added the above stock and let simmer for some time. Eventually I cooked the pancit noodles, snow peas, and shrimp in the soup. Soup is topped with bean sprout and rau ram which is an herb that tastes like black pepper; it goes by a number of misnomers--in my opinion--(http://en.wikipedia.org/wiki/Persicaria_odorata))

I'm not going to lie... I hate soups... I really do... Anyway here is my dish: Nettle soup with shrimps.

It's an easy recipe:

2x onions.
400g. of nettle.
40cl. applecider.
200g. of shrimps.
80cl. of chicken stock
Apple vinegar.
Salt and pepper.

This is NOT an original recipe (as I said: I hate soups), but you slice the onions, cook them, add the neddle. When it has "sunked" (kinda like with spinach), add the stock and applecider and let it boil for 8 min.. Blend the whole thing and add salt, pepper and apple vinegar.

Place the shrimps - only lightly seasoned, add the soup around it and serve with some grilled bread with cheese. I used spelled bread (dunno if that's the right translation though).

Even though the challenge sucked and I hate soups, it was fun to do: catching some shrimps, foraging nettle and baking bread. I hope that you can get pass by the "cold" look of the soup - it wasn't bad for a soup.

Okay, so soup/stew.

First, take a couple pounds of beef, cube it roughly 3/4 - 1 inch. Dredge in flour and black pepper and salt.

Cut 4 each of medium oinions, potatoes, medium carots, and celery stalks, into pieces similarly-sized to the beef. finely-cut 8 large garlic cloves.

Toss 4 tbsp olive oil into a pan, get it near-smoking, quickly sear your beef on all sides. (sorry for this not being in the vertical. It totally slipped my mind.) Remove beef to your stew/soup pot, deglaze pan with a little wine, pour the mixture into the beef. re-heat the pan, whip out another couple tablespoons of olive oil, heat it up to near-smoking, toss in your onions and garlic. Cook for roughly 2-3 minutes, until fragrant, add your other vegetables. cook for roughly 5-7 minutes, until all scents have mixed nicely and are not too strong (onions should be translucent at this point) and put into the soup/stew pot. At this point, dump the entire bottle of red wine into the pot (That's a 1.5L bottle, mind you) and get it up to boiling, add a 1.5"x" strip of orange peel, 3-4 fresh small sprigs of thyme (I used lemon thyme, here,) one or two anchovy filets (to enhance the beef flavor) and 1 tablespoon freshly grated ginger root. Boil for 2-3 minutes, add 2/3 cup of barley. Mix well, reduce to simmer, cover. Let cook covered at least 90 minutes, stirring roughly every 10 minutes.

Serve with a little chopped cilantro for garnish and a zesty enhancement to flavor. Of course, salt as needed. (I omit salt most times as I'm on a heavily sodium-restricted diet.)

Made some chicken rice soup with some eggs mixed in (sounds gross but has a egg drop soup effect).
Came out a little thicker than usual since I added a little bit more rice, great for cold days (like today) or sick people.

Topped with some bean sprouts and some homegrown thai basil, spring onions, cilantro and some fried up garlic I made from last week.

here's my submission for the challenge: Lentil Soup w/ Kielbasa. No verticals as I forgot to take pictures as I was cooking

Ingredients:
>2 tbsp olive oil
>1 cup diced onion
>1/2 cup of carrots and celery each
>1 tsp salt
>1 lb lentils
>~1 lb kielbasa
>1 can of chopped tomatoes (mostly drained)
>1 and 1/2 quart chicken broth
>1/2 tsp ground coriander
>1/2 tsp ground allspice

Directions:
>In a large (i used 8 qt) pot, heat olive oil over medium heat
>Once hot, add onion, carrots and celery and sweat for about 5-7 minutes.
>Add broth, tomatoes, spices, kielbasa and lentils together
>Increase heat to hi and bring to a boil and then let simmer for 40 minutes.
>Remove from heat and puree the soup (sans kielbasa) until desired consistency (l left mine more thick).
>Cut up kielbasa (with whatever method you'd like) and place back into soup. Stir to mix

Made some vietnamese based meatballs (the ones you can get from bakeries) with a chunky tomato soup with shredded yam bean to make the soup runny but not watery.
Topped with some herbs and a side of home made garlic bread but obviously I was too derp to take a photo of it and just dug in >_>

I used 2 cans of coconut milk, 7-8 chicken thighs (I did the deboning myself which was a complete waste of time), 1-2 stalks of lemon grass, a handful of lime leaves, juice from 1 lime, 1 small green bell pepper, 1 small red bell pepper, 1 deseeded chopped red chili. Fish sauce and salt to taste.

I basically just put everything together in a pot minus the chicken and bell peppers and brought it to a simmer. Added the chicken, then the bell peppers and adjusted the seasoning. Served it with some jasmine rice.

For the price I paid for the lobster, I wanted to keep it whole for the wow factor. I also opted to make a fresh lobster/seafood stock because I couldn't find anything even close to lobster stock or lobster sauce.

Gazpacho! Perfect for summer. Served chilled.
I wanted to make bread and grilled shrimp to go with this, but my area has been experience some major stormage, so I didn't make it to the store. Also, this was a great experiment in what-the-fuck-do-I-make-away-from-home. Along with tabouleh, things like that.

This soup consists of chickpeas, onion, carrots, corn, sweet potato, celery, yellow squash, garlic, cilantro, tomato sauce, lime, avocado and chipotle. In general, it is called tlalpeño. I like to include crisped tortilla strips. I forgot green onion in the ingredients pic.
