It was absolutely the worst job I've ever had, and I have worked a lot of weird shitty jobs. If nothing else, seeing the amount of food waste was heart crushing. If something at one end of the line was down (which was frequent) it was too much of a hassle for them to stop the pasta sheet maker so for half and hour or more I would just be constantly dumping perfectly fine pasta into the trash, hundreds and hundreds of pounds at a time. All shifts rotate each week from 6am-3pm then 3pm-11pm the next week. I am convinced this was intentional to break worker's spirits. The floor is always soaked with water so your feet are always wet and no one cares because inspectors are in the pocket.

Then there's this. When cannellonis came off the cooker belt many would fall through a gap and we'd catch them in a plastic bucket to be put back into the packing line. But of course coming off the conveyor they get covered with bits of gunk. Again, no inspectors gave any shits, these would go straight into the package as is.

Pretty much. Keep in mind this process only last a few hours, and everything is either filtered or pasterized, while the air is quite clean. Which is why this type of north american "cheese" looks more like a construction material, than actual food with taste and texture.

For mold to develop, you need more much time at a lower temperature; moldy cheeses need to be actively seeded with spores to properly develop. But since it's in the air (ha!) I'll do Roquefort tomorrow.
