I wish freeze drying was not prohibitively expensive. Freeze dried spaghetti packs would be amazing. I'd buy them over ramen any day. But too bad they're only available in a survival food format. A pouch is $15+. I'm watching a video about it being done and the noodles just need to be soaked in hot water for a few minutes like instant ramen.

Just because I like my idea -
Cut tank in half, put gasket wmaterial on both sides to seal, run an expansion coil and a pump from a freezer around both sides of the tank to keep the food from rotting and insulate the hell out of it with spray foam, plumb vacuum connector to top of tank, run line to baffled condenser box, hook up harbor freight vacuum pump to box.

Nature's Harvest makes small freeze dryers for around $1,000. It's well within the reach of consumers now. All American makes pressure cookers if that's out of reach. Not quite the same since you're not supposed to can cooked spaghetti, but you could can a meat sauce in half pints and cook the spaghetti when the mood hits. This brings single serving spaghetti to the same level of convenience as instant ramen. Sloppy Joe's, BBQ pulled pork, chili, soups and stews, there's a surprising number of of instant dinner type things you can put up with a pressure canner.

It's not that bad actually. It's a bit of an investment, but the $1-3k for a N. harvest dryer is essentially like buying another fridge. Most of the expense is the oil-less pump. You can go cheaper for an oiled pump, but they suck more.

The main pain I have is it needs 72F ambient and below temps to work, and it's loud as fuck. Meaning I can't run it in my garage in the summer. Which kinda defeats the purpose.

Anyway, banana chips and carrots are fucking amazing freeze dried.

You can freeze dry in a refrigerator but it takes forever. Weeks.
