No, there isn't a single dish is Mexican cuisine I would rate above a 1/10. They are truly subhuman dumpster people. On fact, the only spic "cuisine" I've ever had that was remotely decent was a chivito, and that was only because a Greek diner I went to happened to have a Uruguayan chef in the back.

I've never made it but I've seen it being made. Here's caldo de fideo:

>make a scuffed sofrito and blend it beyond sofrito texture
>activate sofrito by cooking it a bit in a pan until you smell garlic
>combine stock, sofrito, and noodles
>cook until done
Scuffed sofrito (not a real sofrito by definition)
>fresh tomato
>Mexican oregano
>raw garlic
>raw onion
>raw serrano peppers
>salt/pepper
>cumin
>fresh cilantro
>EVOO
Blend as much as you can. If your blender is shit, you may need to sieve it.
