the tripe comes pre-cut and pre-cooked, so after defrosting I put it in my instant pot for 30 min at high pressure.
As it cooks start with pork lard and diced onions (I like lots of it). You want to saute the onions until translucent and you don't need to get much color on it

when the onions is sauted add plain wheat flour to turn the onions + fat into roux, then add paprika (4 tsp sweet paprika and 1 tsp chipotle). Add some stock (I had pork or beef, not sure) and mix well. It does not look like much at this stage but that will change soon

Funny. Sheep tripe are my favorite meat. Didn't know Tchekoslovakia of all places would have a similar recipe.
