How would you prepare raw calf liver?

I've given up o cooked, even soaked in milk they taste like shit.

Soak it in water.
Dry and sautee with onions until brown
Add a bit of water and simmer for about 30 minutes.

Or

Soak in water.
Dry, coat in seasoned flour
fry until cooked.

These are horrible recipes for people that don't like the taste of liver. Simmer for 30min? It will be chewy and taste very strong. And garlic and onions will not be enough to cover up the taste of liver enough that this guy is gonna eat it.

This is what you need to do. First and foremost you want to cook the liver hot and fast. You want the inside to be pink and creamy. Second, you want to go for bold flavors. Either cook it with a bunch of fresh herbs or go for Indian, Mexican Sichuan or other cuisines that are heavily spiced. A recent favorite of mine had been to prepare it just like Nashville hot chicken. Sweet and spicy preparations work surprisingly well with liver.

Liver is one of those things I can just eat with heat applied an no seasoning. If anything, any other additive takes away from the taste of liver, which in and itself is amazing.

With that said…as craaaazy as this sounds, lightly drizzle Montreal seasoning on one side and then microwave in 30 second intervals until it looks perfect. TRUST ME.
