I've been cooking for lots of years but never once had thought to heat a flour tortilla up. I just used them right out of the package.

Well about 3-4 months ago I read a post that reminded people to heat them on the stove before using, and holy shit have I been missing out.

Now my girlfriend can't get enough of anything using them, from wraps and burritos to quesadillas and tortillas for hummus dipping.

Start heating up your tortillas, you won't regret it.

I learned this trick from working with Mexicans in construction. They always have a little propane burner for their tortillas. I usually heat them on my cast iron pan, but if you have a gas stove, doing it directly on the burner is best.

You can also butter and stack them and roll them into a log in foil and throw them in the oven for a soft not crunchy texture. personally I like them crunchy but when I’m doing a big stack for soft taco night the oven is easier. also gotta pan-fry your burritos. is pan-fry the right term? not like the pan-fry you do to a schnitzel.

Mix flour salt and water so it's runny; pour a circle into a pan shape it with spoon when the sides curl then flip it(or just best guestimate on that).
Use like 375 heat or so don't need oil in nonstick adding oil makes it fall apart

Cook your quesadillas in butter in a pan, they'll get nice and flaky. Or you can use olive oil and it'll get crisp but not quite flaky.

Also, use a single tortilla and fold it over, and just make two of these instead of laying them flat. It's much easier to flip, especially if you do something like heat up some cooked chicken in salsa and add that to the middle between the cheese (cook off enough liquid from the salsa that it won't make a mess).
