Contrariwise, American cheese is a great innovation in cheesery and is due a great deal of respect. Emulsifying the cheese with sodium citrate (or whatever it is?) makes it melt like a dream. Kraft Singles are bland but you can make your own emulsified cheese at home that's just terrific.
