I developed a chicken wings recipe for Juneteenth based on that Chinese coca cola dish. It's chicken wings cooked in watermelon soda with added Louisiana hot sauce and watermelon Kool Aid prefer (it otherwise didn't have a super watermelon-y flavour). It's good af but I was told it might be racist.

Where in originally from, wings are used as soup meat more than anything so I make stock with chicken feet, strain it and cook chicken wings soup in the stock built in a fond of crushed tomato reduced in olive oil, with carrot, celery, onion and potato as the additional veg ingredients. It's good.
Also nice to get wings, put them into a glass or ceramic baking dish and cover with chopped garlic, zested lemon, dried rosemary needles, fresh ground peppercorn and flaked red chili. Also oil and salt. Then cook until the cast off liquid is reduced out and the baking dish is browned.

I have entered in a couple wing contests and done pretty well. Best performing flavors were Moroccan dry rub : Brown sugar, ground toasted sesame, ras el hanout, harissa blend, and zatar with salt, wings tossed in clarified butter, and Rich Boy Garlic Parm: thin chicken stock roux with garlic, parm, black garlic, and black truffle (I used the cheap kind that comes in the 16oz jar with liquid)

Not strictly buffalo, but still hot. Dry rub in a mixture of Frank's red hot powder, black pepper, garlic powder, red pepper flakes, cayenne pepper powder, onion powder, and anything else that looks like it might go when you're making them. No measurements or proportions, just eye ball it and make sure to have a big bowl if you're cooking up a whole family pack. Let them rest in the refrigerator for an hour or more, then bake at 400 for 30 minutes on a rack. Flip them over, top each with a slice or two of fresh jalapeno, bake another 30 minutes. Brush with whatever BBQ sauce you have (mixed with hot sauce if you have a good one), then broil for however long until that bakes on really good.

Yellowbird makes a wonderful ghost pepper hot sauce. I dry my wings really well and add a touch of baking soda and cook them in the oven. Once they come out coat them in the sauce and let them rest. I made five pounds for the Super Bowl. Serve with ranch, blue cheese and celery sticks. Will make again.
Teriyaki and of course BBQ are also my favorite.

I use Chef John's recipe and add a bit of concentrated pepper extract until it's hot enough. Not too much so it doesn't taste like ass. Toss the raw wings with baking powder before cooking the shit out of them in the air fryer because I got food poisoning once and FUCK THAT.
