You could theoretically make a weird sort of pastry cream or custard in a similar fashion, but that is assuming not only gelatin, water, and egg, and that you're mixing the egg in raw, then cooking the mixture and not mixing bloomed gelatin with scrambled eggs as you describe it, which would just end up as a bowl of disgusting.
