JP's stuff is great. Out of dozens only 1-2 have been duds. The best were his early videos where his boomer brain didn't understand he could make money off YT and was more surly, and clearly drunk while cooking. Deep cut, look for his PBS cooking videos he did in the early 90s.

I kinda get the sentiment, but it's really no different from any other cuisine. Ckd essentially has 3 styles of recipes:
- super easy recipes with very basic ingredients that you can probably make regardless of what you have in your pantry
- Homestyle cooking which do use "exotic" or Chinese ingredients, but this can usually be gotten at an Asian supermarket easily and you only need like 5 or so pantry staples for almost all of them that a normal western kitchen wouldn't have
- historical recipes which often include a shitton of labor and special ingredients. You're shit out of luck if you can't find those in your local Asian supermarket and only a few Asian supermarkets are well enough stocked to carry all of them.
No. 1&2 are easy to cook imo. It's like when you get into Indian cooking and you need a bunch of unique ingredients, but quickly realize a handful of spices and ingredients will enable you to cook like 80% of dishes.
And to ckd's credit they have gotten really good at explaining substitutions while explaining what difference those make and staying realistic in what their viewers will cook and what they won't bother with.

Yeah I get that. I used to live in a city where the only Asian grocery store was some super small room literally the size of a living room in a normal flat, filled with only dried and frozen goods. Now I live in a city where a gigantic Asian grocery store opened that's got literally any Asian ingredient (including Indian) I ever looked at including fresh stuff. Online the same ingredients are insanely overpriced, so I get why you wouldn't want to do that. I hope you get something similar near you too eventually anon.
