What are acceptable ranges of shot time and ratio to still be espresso? What I gathered from watching Hoffman is that it 2:1 in 30 seconds was a standard, and I had to stay pretty close to that. But asking questions in the last thread it seems like there's a wider band.

~2:1 in 30 seconds at 9 bar will (generally) give you a thick bodied shot for diluting out in various milk drinks, aka a "normale". Best used with easily extracted dark roast beans and low flow/high resistance baskets. If you're trying to make tasty straight espresso with non charcoal beans, don't be afraid to deviate. Here's a minute long 2.5:1 shot with ~25 seconds of preinfusion. Turns out that's still espresso. If he pulled another 15ml of liquid out, it would still be espresso.

I own a chemex. My moka brew today. I tried documenting best I could. Weights are estimates, when I'm brewing moka I try to forget about all that autistic nonsense of accuracy. It's just coffee.
Anyways, 6 cup Bialetti Venus, ~27g coffee ground at 40 clicks on p2, room temperature water up to the valve, no paper filters, medium heat on small gas burner. Total time on heat ~5:20 (320 seconds), coffee started coming out around 4:00 (240s), brew was stopped after 1:20 (80s) by placing moka into bowl of water. Somewhere around 180ml – 190ml of brewed coffee out.
The grind was a bit too fine in my opinion. I just got this grinder 2 weeks ago and I'm still playing around with the grind size.
On the left: top is before brewing, bottom is after brewing.
In the middle: the coffee in a 200ml cup, on the bottom you can see how much sediment was left over.
On the right: the particles that got into the boiler. This is what I'm trying to avoid when I use a bottom filter. I filled the basket while it was set in a small cup, tapped to level, then placed into the boiler. Had I filled and leveled the basket while it was in the boiler more coffee grinds would have gotten in there.
Final brew tasted like moka pot coffee.

So what I got was very fruity. The Guava note was more pronounced on my palate. Mild in Acidity, and somewhat of a light body. The aroma was mostly fruity/floral(Jasmine). The mouthfeel was smooth.

I just got the kingrinder K6 as my first grinder, and I'm a little confused. Probably because I'm ESL and the Kingrinder guys are also ESL. When they say "120 clicks from zero" for the medium to medium-fine settings, zero means putting it as coarse as it goes, right?

Today's espresso, after getting a bunch of help yesterday. Upped the dose to 17 grams. I was shooting for 34 out but ended up with 36. Took about 35 seconds. Very full body, good flavor, but a little bitter. I'm going to try 16.5 grams later this morning.

Continuing to dial in. Upped the dose by 0.5 grams to 16.5. Pulled 33 grams in 29.5 seconds. Which is by far the closest I've gotten to the "standard" 2:1 in 30 seconds recipe. Thanks to everyone that helped answer my questions yesterday.

Its all going to come down to your beans and what you like. Starbucks or other grocery tier "medium"-darks? Probably best at 1:2 @ 30s in milk. These days they're usually refered to as "boomer shots", popularized in italy in the 40s. Coffee quality is very different 80ish years later, so play around with it. Light roasts are harder to extract and do well at higher ratios. Extra flow through the puck extracts more. Wafo(high end $200+ basket maker) recommends

Huh, this is the least amount of particles that I've seen in my boiler after an unfiltered brew. 40 clicks on P2 (for real this time), on the heat for 5:20, coffee out in 1:20. Tasted pretty much the same as last time, with a similar amount of sediment left at the bottom of the cup. The 'puck' looks a little worse, thoughever.

Also, I didn't tip when prompted, and I did not intend to tip if they corrected the mistake. The drink tasted like warm oat water with a touch of coffee flavour. I was left with a strange bitter-oat after taste after every sip. Next time I think I'll order a "tall double shot latte" and correct any mistakes. I do not intend to drink Starbucks oat beverage again.

I scrubbed the inside of my moka pot with a scouring pad because it smelled bad. Will it ruin the taste of my coffee? I do this with my stainless steel pan but it doesn't ruin the taste of food. I'm wondering if this also applies for coffee. Any anons here have done this before?

3 weeks new to coffee, got my first hand grinder today. I'm trying for a coarse grind for my French Press.
What level of coarseness would you say this is? Would this level of coarseness be good for a French Press.
