made my first steak

does not look good

yikes. Bad sear, looks blue rare but not in a good way.

Get yourself a cast iron pan and go near max heat. Heat the oil till its piping hot and then add your steak (slowly and cautiosly and laying it down away from you). Let it sit and dont fuck with it and turn after about 2-4 minutes depending on what you want. Before you turn to the other side, turn the heat way down. Then when the pan has cooled considerably add your butter thyme garlic etc. Let the butter absorb the flavors. Then add the steak back in. Baste and turn the heat back up and finish for another 2-4 minutes depending on what you want and steak thickness. Let sit for 5 minutes or so.

Before cooking let the steak sit at room temp for 30 mins.

not really bad, but not good. mediocre. bit raw (medium rare is the way to go). sear it longer next time on both sides. also let it rest before cutting it. it will cook the meat further. generally it looks like a low quality steak desu. keep trying and you'll succeed

If you take it right out of the fridge and plop it onto your hot pan you have a 40 degree piece of meat that needs to heat up to proper temp, which means its cooks longer, which means bad steak. Let it sit for a bit and its warmer, so there's less of a temperature delta to overcome before its done.

i've gotten good results from criss-cross scoring it, both sides, then lightly seasoning about hour or half hour before, as it reaches room temp. cast iron, thin amount of coconut oil, finish with butter. or just grill it on open coals, tastes great. but coals take too long to light so i prefer gas bbq which i don't have right now.

I dont think 40 or 43 degrees after half an hour is going to matter much.
>cooks longer which means bad steak
What?

>> No.20326795

>>20326207
it tasted great, texture was ok, but I'm worried that it was too raw.

I marinaded it for a few hours before cooking with a home made marinade and cooked with a lot of butter.

>> No.20326973

>>20326795
you shouldn't need to marinate a steak, but i guess it's a thing that people do so whatever.

here is how to cook a steak.
>put some paper towels on a plate
>salt your meat
>place your meat on the towels and put some more towels on top
>let it get to room temp
>discard the paper towels
>put a bunch of fresh black pepper on each side (and more salt if you want)
>get a pan really hot
anyone who claims you need cast iron is a fag. you can use one if you want, but any quality (not nonstick) pan will work
>put a little bit of high smoke point oil in the pan (i use safflower)
>place meat in pan, press it down so it's fully in contact with the pan
>cook for a minute or two
>flip and press it down again
>repeat as until cooked to your desired doneness
>when 98% done, put some butter and garlic and maybe some herbs in the pan
>as the butter melts, scoop it up with a spoon and baste the meat with it
>turn off heat and remove meat from pan
>let sit for a few minutes on a plate
>move to different plate to eat

it may seem like a lot, but it's easy once you do it a few times. it takes like 10 minutes. once you get good at it, you won't even think about marinates or sauces at all, because it will be delicious on its own.

>>20326973
and just to clarify, the paper towel steps are important to dry your meat and let it get up to room temp. this will make it cook faster and more evenly

This, but get the pan glowing hot, a nice orangy-yellow. Only 1 minute per side, max. Make sure to turn the steak 90deg counterclockwise every 15sec.

Can you use a good non-stick pan to cook steak. I don't mean a bad one. I mean a good one

>> No.20328599

I have a ceramic non stick pan

>> No.20328609

>>20328553
Technically yes, in the sense that you can take a raw steak and turn it into a cooked steak. But it's a bad idea to let a nonstick pan get VERY hot (the teflon degrades at high temps) so if you're cooking according to that rule you won't get a good crust on your steak.
