I wait for the hobo to come around. He sharpens my knives, does my wife while I watch, then I give him a sandwich.

How sharp should my knives be? Is being able to cleanly cut through a sheet of paper a good benchmark?

Yes, or can you shave a patch of hair on your arm.

Why yes, my $300 Japanese knives make me a better cook than you. Not because they inherently make me better, but because I care enough to have nice things that I take care of.

Those knives are too big, you cant peel with them.
Makes no sense to have such a big knive in the house if youre making food for two persons.

Based.

The oaper test is not really for sharpness. It shows you if the edge is evenly sharpened and chip free. If you have a dull spot or small chip your knife will catch on the paper.

Different blade geometries will cut paper better or worse, so it isn't really gopd for testing sharpness.

My benchmark is that a chef's knife should cut through a tomato with nothing but the weight of the blade.

My benchmark is that a chef's knife should cut through the table, melt through the floor, slice my neighbor in half and drill all the way to Earth's core and come out on the other side with nothing but the weight of the blade (the knife is shipped to me afterwards). Otherwise HOW AM I GONNA CHOP MY POTATOES?

Yes, having things you like and take care of makes you look forward to using them more and makes you more likely to use them.

If the only reason you can get yourself to cook is your knife then you are pathetic, holy shit. What, when you have a bad knife do you just get burger king or something? What the fuck kind of gay logic is that. You HAVE TO USE a knife to cook and you HAVE to eat food, if you were talking about most other things - sure - but a basic cooking tool is not something you need 'motivation' to use beyond hunger, you fat fucking loser.
