But to answer your question about the chili dish; the cheese is very thinly shredded so it melts as your eating it, if they put it under a salamander or w/e to melt it before serving it would just be a gross slab by the time you got halfway through

This is because it was invented by Greek or Cypriot immigrants who make that kind of oddly spiced meat sauce. Don’t blame the Ohioans for that. I imagine the giant cheese mounds is a result of what every immigrant group has done to their food in America, which is to add a shit ton of ingredients that were expensive in their homeland but cheap in America.

It's actually better that the cheese is cold. There's so much cheese that you wouldn't even like getting a mouthful of nothing but melted cheese at once, and it adds texture to the dish. Skyline chili is all about texture. The texture of the noodles, the crunch of the onions, the chew of the beans, and the texture of the cheese.
