Choose a decent pepper. Habaneros and Scotch bonnets are very flavourful while still being hot - you can get away with salt and a little acidity through vinegar, lime, or lacto-fermentation. Superhots (ghost pepper and beyond) usually need a little something, so decide what flavours you want, or what region of the world you're aiming for, and run with that. A little garlic, lime and salt works wonders with pretty much any MSHU pepper. Thai peppers (prik kee noo) have a decent kick, and also play nicely with lime and garlic (and ginger/galangal). You can mix and match peppers for different flavours - smoked, dried, fruitier, sweeter, "greener". If you find it needs a little rounding out, orange, mango, and carrot work well. If you want a smoother sauce that you don't need to shake constantly, a little cornstarch or xanthan gum goes a long way.
