It was illegal to make anything except a government stew for many years and most modern chinese food is a reinvention of what ild things probably were, since what they were actually was often lost.

Could they just seek out old cookbooks? Like see if any Chinese Americans have some old book from their great grandparents from before the revolution. Chinese people brought their cuisine over here and changed it to fit the American palate so they might still have the old recipes stashed away somewhere. Like my mom had a Fanny Farmer cookbook from I think about 1900.

A famine only increases the spread of cooking knowledge as food is all anyone thinks about in a famine. Any type of knowledge and skill used to squeeze out food from the environment will be of utmost interest.
What erodes the knowledge of cooking is -ironically- an overabundance of convenient meals that are also addictive. I.e. what is common in America.
