I think this is the best currywurst recipe online because you get much more flavor when you fry the tomato paste and get the most out of the spices as well before deglacing. most people skip those two steps because they don't know what a big difference it makes but tim mälzer is obviously a pro.

you can also add finely chopped onions with the tomato paste. don't be cheap about the paste. get mutti, it's noticeably better than other brands that usually use flavorless frankenstein china tomatoes

there is chicken bratwurst which works as well. even beef will be ok if it's available to you but pork is what you would usually use for currywurst. the sauce works best with that
