Discounted Fujiwara arrived earlier today. It was a display knife and had some slight patina forming on the edge. The finger notch is a bit smaller than I anticipated for my giant fucking fingers but it feels great and I think it'll be an excellent workhorse.

5-8 dollars for anything under 6 inches, and then 1 dollar per extra inch after that. Maybe offer an economy and premium option.

The economy option will use a diamond 400 to create a burr, and then a 1k stone final edge. The premium will be the same, but you will tune the edge angle to suit the knife, and apply a 3k microbevel to improve sharpness and edge retention. If you want to really ball out get a couple japanese naturals and you can put a refined or extra toothy edge that will stay sharper than a synthetic edge.

Base Edge repair charge is 20 dollars, but severely damaged knives will be extra.

If you're an honest sharpener you would never use uncooled, powered abrasives because they destroy the temper at the very edge of the knife severely reducing edge retention. A second hand tormek would be a great option, but still fairly expensive.

A 400 grit diamond plate will sharpen an extremely dull knife in like 10 minutes or less, and then it is only a couple mins on the higher grit stone. You just need to use a lot of pressure on the diamond plate.

It's for the housewives with rich husbands. They get fancy knife sets, but will never learn to sharpen.

I got the atoma 140 but I don't use much pressure. It leaves very deep scratches so I just ordered a Shapton pro 220 to replace it. I'm considering getting a Shapton glass 500, too, but I'll have to see how the 220 does.

The atoma 400 is fast enough and jumping to the longer lasting synths isn't as bad. The 220 shapton dishes crazy fast. The 500 shapton glass also dishes super fast.

You can go from 400 atoma to 1.5k kuromaku with relative ease.

Mine is still going pretty strong. It has slowed down some, but not overly so. I have used it quite a bit. You can replacement tops for atomas to save a little money.

I have this ridiculous precision diamond plate from shapton that was crazy expensive, but the diamond has lasted for a remarkably long time on it. It's in the 600-800ish grit range. You can even send the plate back to get fresh diamonds on it, but I haven't needed that yet. The extreme flatness is excellent for straight razor honing. I don't recommend it for most people.

The thing I like about this knife is that even if I don't keep it sharp it still cuts nicely because of the grind. And when I do keep it sharp it cuts like a dream. Only problem is I can't leave it in the sink overnight (I still do, but I know I shouldn't)
