I just made the best hot wings I have ever made. Fried in a frypan full of soybean oil (vegetable oil) wings cut into drumettes. I coated them raw with msg. I fried em half way then took em out of the pan to wait for heat to conduct to centre, then deepfried a hot dog while that was happening. When the sliced to shit hot dog was crisp, I took it out and put the chicken back in. Fried it till looked done. In micrpwave elted a half stick o buttah. Put 1/3 sriacha, 1/3 tobasco and 1/3 Walmart mystery hotsauce bin sauce in the butter with Dill weed. When wings done, tauce with sauce.

Tossing them in some baking powder and blasting them on high heat in an air fryer with a flip halfway through is "good enough," especially for a quick and easy wing dinner. The problem with homemade wings is always the sauce. You can't make it taste like any of your favorite restaurants with their proprietary pepper extracts and dried blends. You can buy extracts to increase the scoville, but they usually taste like ass if you use too much.
Also ranch is just as good as blue cheese. I like to do a ~50/50 blend between them myself.

Baking them for 25 minuets and then finishing them off in an air fryer for 30 (flip half way through) makes them crisp up perfectly too. The fat content in the skin itself lends really nicely to having them air fried. I couldn't tell the difference between the air fry and oil fry.
