Egg blessings upon ye, brother. May your yolks be creamy and not an eggshell bit get past thine lips.

I used a sieve to gets the yolks extra fine.

Once the yolks were sieved, I mixed them with mayo, minced red pepper, minced jalapeño, garlic powder, onion powder, fresh fill, green onion (white), sea salt, pepper. And then I topped them with finishing salt, paprika, and green onion (green).

Here's a good recipe from my mom,
You'll have to improvise a bit...
Eggs - 1 dozen hard boiled, cut in half lengthwise
Onion - 1/4 cup finely minced
Coleman's Mustard - either dry powder 1/4 tsp. or wet 1/4 tsp.
Indian Hot Curry Powder - 3/4 tsp.
Hot Sauce - 1/4 tsp.
Salt - 1/4 tsp.
Pepper - Freshly ground - 1/4 tsp.
Mayonnaise - 1 cup +/-

Remove cooked egg yolks from eggs and finely crumble in a bowl with a fork
Place cooked egg whites in a covered container and refrigerate
Add dry ingredients i.e. curry powder, salt, pepper, and dry mustard (if using) to crumbled egg yolks and mix together
Add onion to egg yolks and mix together
Add wet ingredients i.e mayonnaise, hot sauce and wet mustard (if using), and mix together. Almost whip it.

i work at a diner. we're bringing back poached eggs apparently so that's just another fucking hassle

Don't those take a long time to make and are pretty specific to a customer? Then there's cleanup time also. I hope that you get a decent tip for that.

We have to have any egg done within 8 minutes. I've only got two burners, if i had a third or more i could leave a pot of water on a constant boil for poached/boiled, but yes even our coffee-temperature water takes some time to reach a boil

I've always just made egg salad with a fork and never thought of doing that with yolks for deviled eggs. I've also never made my own deviled eggs, I'm just the guy who clears out the tray when no one wants them

Used to do a Case of them at a time, i guess a fork would be ok for a dozen, but i would throw any broken whites in too and whir them into a paste.

The media has zero science literacy, don't trust them on anything food or science related. Remember, journos take 0, that's zero, science classes for their major. They aren't forced to learn that shit in school, and you bet your ass they probably failed science that was required in public school (which is bare bones to non-existent depending on the school district). I was even highly disappointed by science blogs, those are just well-cited journos, not actual scientists with a media bent.

Best you are going to get is science youtubers, they at least have science backgrounds. And you will see ZERO videos from them click baiting like this.

I've had 2-4 eggs for breakfast every day for the past 5 years. This morning, I had two with a sesame seed bagel. I love eggs so much. Sometimes I also have it for dinner. I know what you're thinking... breakfast... for dinner?! Well as an adult, you're allowed to do things like this.

Oldfag here. They've been going back and forth on this for ages. A friend and I have a saying
>eggs are good eggs are bad eggs are good eggs are bad
This is used nearly every time some new study suggests the opposite of the last one.
