Yeah I realize that now but I don't feel like going to the store again. I have some leftover buckwheat. That sounds gross/slavic enough to thicken it.

You can always make it chocolate milk.

I don't know that chocolate milk would go down too well with soup but it would be likely go down to wash down after some soup as a dessert.

That is what I decided on, fried it first with onion and garlic to get all the fat out and into the soup and deglazed with stock, smells extremely good.

Not sure if I'm going to thicken it by blending some potatoes separately, or with buckwheat roux.

you got any cornflour?
I keep a bag of instant potato flakes on hand for thickening soup/stews like this. stir in the flakes to thicken it, then add a bit of milk or cream to lighten it back up a little and give some richness. it's good shit.

Cut the onion in half and slice it in long slivers (idk why but Slavs like it this way)
Cook half to 2/3 of the onion in butter until transluscent. Cook on medium-low and covered and stir frequently, adding water if it becomes too dry. Do this for 15 mins or so.
Remove from heat and add paprika, black pepper & salt and add your sausage. Brown the sausage and mix with the onion and then fill with beef stock.
Add cubed potatoes to the stock and the remaining onion and some fresh dill and parsley
