I'm sorry you've never had flavourful celery. I moved to the US from Euroland. We have a few different varieties of celery. But in America, most supermarkets only have the pascal stuff (and root celery, if you count that). You can also get herb celery from Asian supermarkets. But when you tell people here about mountain celery, red celery, black celery (used to make a casserole!), bitter celery, alexanders and other types they're incredulous.
Reason being is that other varieties of celery have flavours that the British found unpleasant so they bred and bred and bred celery until all traces of taste were gone.
It's one thing I miss from home, ESPECIALLY mountain celery.

buffaro ring only made it to Australia about 5-6 years ago, and 9/10 times it's completely fucked. These Chinese and Indonesian fry cooks cannot fathom the concept at all. When you see "buffalo wings" on the menu, tt's either wings doused in sriracha, or wings doused in Franks (or some facsimile) but mixed with honey and soy. The cannot fucking leave the goddamn recipe alone because it shatters their worldview.

Found a pub in Sydney which makes them *properly* and introduced all my friends to how b'lo wings are meant to be. One of them worked in a restaurant and taught the cooks how to do it, and when he tried his first buffalo chicken sandwich it was fucking honey soy buffalo. Thurdies in the kitchen just stood there perplexed like retards.

Mountain celery is also called lovage so look for that. It's a variety used as an herb rather than a vegetable. If you want a veg variety, black celery is the one to go for. And if you want to grow uncommon European vegetables, look into growing cardoon. It looks like celery, but it's actually a variety of artichoke. We use it in casseroles and omelettes but it's also nice sauteed in olive oil with garlic and oil-cured olives and finished with fresh sweet parsley and shredded or grated parmigiano. Can be used as a topping food pasta or as a side dish to roasts.
