The main answer is that Nordics, in particular Norwegians, are culturally minimalist to the point that they don't see the point of rich foods. In fact, the reason tacos became a friday thing in the 90s was because the workweek was over and it was more acceptable to indulge a little bit. I live in Minnesota and there are pretty much ZERO Norwegian restaurants, though there are clubs where people dress up to eat lutefisk but it isn't a cuisine that can survive on the open market. we have 'Taste of Scandinavia' which are mostly just bakeries with pancakes.

I am not going to claim that nordic cuisine is the best at all, but as a Norwegian there is plenty of norwegian food that I find very enjoyable, and its not like I haven't tasted all the good food all over the world. I went to IKEA for their winter festival buffet and tried all of the food (instead of just getting swedish meatballs) and it was actually good as fuck. I didn't know they use a lot of mustard and dill together on ham and fish, very tasty. The style of shredded au gratin potatoes they make is delicious and the rice pudding for dessedt was fantastic.
