I made burgers many years ago from a recipe I found perhaps from James Kenji Alt
My mother didn't believe me and told me I needed an egg to hold them together and she was shocked when they came out good
By happenchance she went to a grocery store a week after and got into a conversation with some random woman who was shocked to hear that you didn't need eggs to hold a burger patty together
They all apparently thought it couldn't be done with store bought mince beef

beef is hit or miss, aussie beef are grass fed and just not fattened up the way US cawn fed beef is. Aussie beef can easily be as delicious as US beef, but on average it usually isn't. I just buy the fatty mince and salt it thoroughly before even forming it into patties

The McDolans beef patties are 100% beef and nothing else, why the heck can't I find that in the supermarket.

In the USA costco especially and sams has the best beef and butchers. I can order any cut I want. They package and give to me. Want a certain percentage ground beef? Sure! Probably the beef was too lean back then. Ranchers didn't happen on the corn thing until recently to fatten beef up, so olden cows probably were all grass-fed and moved around a lot. That meant leaner meat, and no fat in the mince means no glue to hold it all together. Hence the egg as a binder agent.

Modern American mince has fat ratios quoted on it, so 80/20 isn't going to need help at all. 93/7 and above might, and 100 lean definitely does need help.
